
A kitchen doing lunch service from midday needs its bread order landed, checked and stored before prep starts properly, which for most of our eight accounts means before six. We've had exactly one late delivery in four years, a van breakdown on Fulford Road, and the fallout was a chef doing his own emergency loaf run to a supermarket at 6.30am, which he has not let us forget.
We keep the round to eight kitchens deliberately. A ninth account would either push the ovens earlier than half past midnight, which nobody on the team wants permanently, or it would risk the window on the existing eight, and that's the trade we won't make.
